KDS and prep-area screens are wiped with degreasers and sanitizers constantly, and foodservice sanitizer regimes are regulated: quats around 200 ppm and chlorine 25-100 ppm are the working chemistry.

Device OEMs own the approved-chemical question. These are their published positions; any protection you add has to be specified around them.
- FDA Food Code 2022 requires food-contact surfaces in constant use to be cleaned at least every 4 hours and sets sanitizer limits: chlorine 25-100 ppm, iodine 12.5-25 ppm, quats per EPA-registered label (about 200 ppm). KDS and POS screens are nonfood-contact surfaces wiped with the same chemistry. (FDA Food Code 2022)
- Elo approves isopropyl alcohol at or under 70%, Clorox Disinfecting Wipes, and Clorox Healthcare Bleach Wipes; Verifone's water-only guidance is impractical in a kitchen. (Elo approved cleaning agents)
